Poached eggs with smoked salmon and bubble for balanced diet breakfast

Create a potato hash with a difference. The addition of cabbage ramps up the feel and nutrition, and change bacon for leaner fish.

1.    Ingredients

  • 1 tbsp rapeseed oil
  • 140g white cabbage , finely chopped
  • 2 spring onions , finely sliced
  • 300g complete new potato
  • 1 tbsp snipped chives
  • 2 medium eggs , at room temperature
  • 75g smoked salmon

2.    Method


Cook the potatoes in a pan of boiling water till tender, then drain.


Heat the oil in a non-stick frying pan or wok. Sweat the cabbage and the spring onions withinside the pan for more than one minutes. Meanwhile, chop and squash the potatoes roughly, then upload to the pan in conjunction with the chives.
