Grab some of those energy-boosting cookies for a fast breakfast, or provide as snacks to bridge the breakfast starvation hole earlier than dinner. Enjoy with yogurt and fruit.
- 2 ripe bananas , mashed
- 150g porridge oats
- 2 tbsp. ground almonds
- 1⁄2 tsp cinnamon
- 100g raspberries (sparkling or frozen)
Heat the oven to 200C/180C fan/gas 4 and line baking trays with baking parchment. Mix the banana, oats, almonds, cinnamon and a pinch of salt in a bowl to make a sticky dough. Gently stir thru the raspberries, trying now no longer to interrupt them up. Scoop up tablespoons of the combination and roll into balls, then location on a baking tray and flatten together along with your hand.
Bake for 15 minutes till the cookies sense corporation round the rims and are golden brown. Leave to cool. Will preserve in an hermetic field for up to a few days
