Spinach falafel & hummus bowl

1.    Ingredients

  • 150g infant spinach
  • 1⁄2 cucumber, sliced
  • 1 pink onion, finely sliced
  • 4 whole meal pitas, toasted, to serve
  • For the falafel
  • 150g infant spinach
  • 400g can chickpeas, drained
  • 1 garlic clove, chopped
  • 1 tsp floor cumin
  • 1⁄2 small bunch of parsley, finely chopped
  • 2 tbsp simple flour
  • 1 tbsp olive oil, plus greater for rolling
  • For the hummus
  • 400g chickpeas, drained
  • 40ml olive oil, plus greater to serve
  • 1 garlic clove, kind of chopped
  • 1 lemon, juiced, plus greater to serve (optional)
  • 2 tbsp Tahiti

2.    Method


Heat the oven to 190C/170C fan/fuel line 5. Line a baking sheet with non-stick parchment. Put all of the falafel elements, besides the oil, in a meals processor and season lightly. Pulse till you’ve got got a difficult mix.
